Matoke and Offal Stew

A hearty breakfast stew combining green bananas with beans, offal, or vegetables simmered in a rich tomato-based sauce with curry spices.

Ingredients

  • 6 green bananas, peeled and halved
  • 1 cup cooked beans or tripe, chopped
  • 2 large tomatoes, chopped
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 tsp curry powder
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • 2 cups water
  • 1 green bell pepper, diced

Instructions

  1. 1 Peel green bananas carefully, removing all the fibrous skin, and cut each banana in half lengthwise.
  2. 2 Heat oil in a large pot, sauté onions and garlic for five minutes, then add tomatoes and bell pepper.
  3. 3 Cook the tomato mixture for five minutes until softened, then add curry powder, salt, and pepper.
  4. 4 Add green bananas and beans or tripe, pour in water, and stir gently to coat everything in the sauce.
  5. 5 Cover and simmer on low heat for thirty minutes until bananas are tender and the sauce has thickened.
  6. 6 Serve hot in deep bowls, ensuring each portion has a generous mix of bananas and sauce.
