Instructions

    Peel green bananas carefully, removing all the fibrous skin, and cut each banana in half lengthwise.

Katogo is Uganda's definitive breakfast dish, born from the practical need to create a filling, affordable morning meal. In Buganda tradition, the morning meal had to sustain workers through long hours of farming. By combining matoke with whatever protein or beans were available, cooks created a one-pot meal that is both economical and deeply satisfying. Today katogo vendors are a fixture of every Ugandan trading center.
