Ripe pandanus fruit pounded into a sweet paste and dried on banana leaves. Traditional preserved sweet.

Ingredients

  • 1 ripe pandanus fruit
  • 1/4 cup sugar
  • 1/4 cup coconut cream
  • Pinch of salt
  • Banana leaves
  • 1/4 cup water
  • 1 tsp vanilla
  • 1/4 cup grated coconut

Instructions

  1. 1 Separate pandanus keys.
  2. 2 Extract pulp by pounding and scraping.
  3. 3 Mix with sugar, coconut cream, salt, vanilla.
  4. 4 Cook on low heat until thick.
  5. 5 Spread on banana leaves.
  6. 6 Dry in sun or low oven.
