Crispy Fried Reef Fish

Whole reef fish seasoned and fried until golden and crispy. A daily Tuvaluan staple.

Ingredients

  • 1 whole reef fish (500g)
  • 2 limes, juiced
  • Salt and pepper
  • 1/2 cup flour
  • Oil for frying
  • 1 onion, sliced
  • 2 cloves garlic
  • 1 tsp turmeric

Instructions

  1. 1 Score fish and rub with lime, salt, turmeric.
  2. 2 Dust with flour.
  3. 3 Heat oil in skillet.
  4. 4 Fry 5 minutes per side until golden.
  5. 5 Drain on paper towels.
  6. 6 Serve with onion and lime.
