Baked Cassava Coconut Cake

Grated cassava mixed with coconut milk and sugar, baked until golden. A chewy sweet treat.

Ingredients

  • 500g cassava, grated
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 2 tbsp butter, melted
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1/4 cup grated coconut
  • Banana leaf

Instructions

  1. 1 Grate cassava.
  2. 2 Mix with coconut milk, sugar, butter, salt, vanilla.
  3. 3 Stir in grated coconut.
  4. 4 Line pan with banana leaf.
  5. 5 Pour in mixture.
  6. 6 Bake at 180C for 40 minutes.
