Ripe bananas mashed and fried into golden fritters. A simple sweet island snack.

Ingredients

  • 4 ripe bananas
  • 1/2 cup flour
  • 2 tbsp sugar
  • 1/4 tsp vanilla
  • Pinch of salt
  • Oil for frying
  • 1/4 cup coconut milk
  • 1/4 tsp cinnamon

Instructions

  1. 1 Mash bananas.
  2. 2 Mix with flour, sugar, vanilla, salt, cinnamon, coconut milk.
  3. 3 Heat oil.
  4. 4 Drop spoonfuls into oil.
  5. 5 Fry 2 minutes per side.
  6. 6 Drain and serve warm.
