Turkmen Bean and Noodle Soup

A thick nutritious soup combining red beans, lentils, and hand-cut noodles in a tomato-spiced broth topped with yogurt and fried onions.

Ingredients

  • 150g dried red kidney beans, soaked overnight
  • 100g red lentils
  • 200g all-purpose flour
  • 100ml water
  • 1 tsp salt
  • 2 tbsp tomato paste
  • 1 large onion, diced
  • 2 tbsp sunflower oil
  • 1 tsp cumin
  • 1 tsp turmeric
  • 200g yogurt
  • Fresh mint

Instructions

  1. 1 Boil soaked red beans in fresh water for forty-five minutes until nearly tender then add rinsed red lentils and cook fifteen more.
  2. 2 Make a simple dough from flour, water, and salt then roll thin and cut into small noodle squares or strips.
  3. 3 Fry diced onion in oil until golden then stir in tomato paste, cumin, and turmeric cooking one minute until fragrant.
  4. 4 Add the fried onion mixture to the bean and lentil pot along with additional water as needed for a thick soup consistency.
  5. 5 Drop the cut noodles into the simmering soup and cook for eight minutes until they are tender throughout.
  6. 6 Serve in bowls topped with a generous dollop of yogurt and scattered fresh mint leaves.
