A simple, soft, unleavened flatbread cooked on a tawa (flat griddle). Made with just flour, baking powder, salt, and water, it puffs beautifully on the hot griddle and is the everyday bread of Trinidad.

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup water
  • 1 tbsp vegetable oil

Instructions

  1. 1 Combine flour, baking powder, and salt in a bowl.
  2. 2 Add water gradually and knead into a soft, smooth dough.
  3. 3 Divide into 4 balls, roll each into a circle about 8 inches across.
  4. 4 Heat a tawa or flat skillet over medium-high heat.
  5. 5 Cook each roti for 2 minutes per side until it puffs and develops golden spots. Brush lightly with oil.
