Banana in Coconut Cream

Ripe bananas simmered in sweetened coconut cream until soft and luscious. A classic Tongan dessert.

Ingredients

  • 6 ripe bananas, halved
  • 2 cups coconut cream
  • 3 tbsp sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon
  • 1 tbsp butter
  • Grated coconut

Instructions

  1. 1 Peel and halve bananas.
  2. 2 Heat coconut cream with sugar, salt, vanilla.
  3. 3 Add bananas to simmering cream.
  4. 4 Cook gently 8 minutes.
  5. 5 Stir in butter and cinnamon.
  6. 6 Serve warm topped with grated coconut.
