Whole Fish Grilled Over Coals

Fresh reef fish rubbed with lime and salt, grilled over coconut husk coals.

Ingredients

  • 1 whole reef fish (600g)
  • 2 limes, juiced
  • Salt and pepper
  • 1 tbsp coconut oil
  • Banana leaf
  • 2 cloves garlic
  • 1 green onion
  • 1 hot pepper

Instructions

  1. 1 Score fish on both sides.
  2. 2 Rub with lime, garlic, salt.
  3. 3 Wrap in banana leaf.
  4. 4 Grill 8 minutes per side.
  5. 5 Unwrap and garnish.
  6. 6 Serve on banana leaf.
