Fluffy rice cooked in coconut milk. The everyday accompaniment to Tongan meals.

Ingredients

  • 2 cups rice
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 tsp salt
  • 1 tbsp butter
  • 1 pandan leaf
  • 1 tsp sugar
  • 1/4 cup grated coconut

Instructions

  1. 1 Rinse rice.
  2. 2 Combine with coconut milk, water, salt, sugar.
  3. 3 Add pandan leaf.
  4. 4 Bring to boil, reduce to low.
  5. 5 Cover, cook 18 minutes.
  6. 6 Fluff with butter.
