Ingredients

200g natural peanut butter or ground roasted peanuts

4 large tomatoes, blended

1 large onion, diced

2 tbsp vegetable oil

2 cloves garlic, minced

1 scotch bonnet pepper

200g chicken or smoked fish

2 cups water or stock

Salt to taste
Instructions

Heat oil in a large pot, sauté onion and garlic 4 minutes until soft.

Add blended tomatoes and pepper, cook 10 minutes until reduced.

Stir in peanut butter and water, mix until smooth and well combined.

Add chicken or fish, bring to a simmer.

Cook on low heat for 20 minutes, stirring occasionally, until thick and rich.
