Timorese Brewed Coffee

Strong, dark coffee brewed from locally grown Timorese arabica beans using a simple cloth filter method, served black or with condensed milk and sugar.

Ingredients

  • 4 tbsp coarsely ground Timorese arabica coffee
  • 500ml boiling water
  • 2 tbsp condensed milk, optional
  • Sugar to taste

Instructions

  1. 1 Bring water to a rolling boil in a kettle.
  2. 2 Place ground coffee in a cloth filter set over a pot or directly over cups.
  3. 3 Pour boiling water slowly over the grounds, letting it drip through the filter.
  4. 4 Allow all water to pass through, taking about three to four minutes for full extraction.
  5. 5 Stir in condensed milk and sugar if desired.
  6. 6 Serve immediately in small cups while very hot.
