Plantain and Beef Stew

Green plantains and tender beef chunks slowly braised in a spiced tomato sauce until the plantains absorb all the rich, meaty flavors.

Ingredients

  • 500g beef chuck, cubed
  • 4 green plantains, peeled and chunked
  • 3 onions, diced
  • 3 tomatoes, chopped
  • 2 tbsp vegetable oil
  • 1 tsp curry powder
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • Salt and pepper
  • Fresh cilantro

Instructions

  1. 1 Heat oil in a large pot, brown beef cubes on all sides over high heat for five minutes.
  2. 2 Add onions and garlic, cook for five minutes until softened and fragrant.
  3. 3 Stir in tomatoes and curry powder, cook until tomatoes collapse into a sauce.
  4. 4 Add beef broth, bring to a boil, then reduce heat and simmer for thirty minutes.
  5. 5 Add plantain chunks, cover, and continue simmering for twenty-five minutes until plantains are tender.
  6. 6 Season with salt and pepper, garnish with cilantro, and serve hot.
