Fresh amaranth leaves cooked with onions, tomatoes, and coconut milk into a creamy, nutritious side dish that pairs with ugali or rice.

Ingredients

  • 1 large bunch amaranth greens, chopped
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 200ml coconut milk
  • 1 tbsp vegetable oil
  • Salt to taste
  • 1 clove garlic, minced

Instructions

  1. 1 Wash amaranth greens thoroughly, remove tough stems, and chop leaves roughly.
  2. 2 Heat oil, sauté onion and garlic until softened and translucent.
  3. 3 Add tomatoes and cook for three minutes until they begin to break down.
  4. 4 Add greens in batches, stirring until wilted, then pour in coconut milk.
  5. 5 Simmer for ten minutes on low heat until greens are tender and sauce is creamy.
  6. 6 Season with salt and serve hot alongside ugali or rice.
