A creamy, salted milk tea brewed with green tea leaves, butter, and sometimes ground walnuts — a warming staple of the Pamirs.

Ingredients

  • 2 tbsp loose green tea
  • 500ml water
  • 500ml whole milk
  • 1 tbsp butter
  • 1 tsp salt
  • Crushed walnuts (optional)

Instructions

  1. 1 Boil water and steep green tea for 5 min.
  2. 2 Strain and return tea to the pot.
  3. 3 Add milk and bring to a gentle simmer.
  4. 4 Stir in butter and salt.
  5. 5 Pour into bowls or cups, top with crushed walnuts if desired.

Did You Know?

In the Pamir Mountains, shirchoy is served with pieces of non dunked into it, making it both a drink and a breakfast meal.
