Yogurt Rice Soup

A creamy rice and lamb soup finished with tangy yogurt, flavored with cumin and garnished with fresh mint.

Ingredients

  • 300g lamb, cubed
  • 200g rice
  • 2 carrots, diced
  • 2 onions, diced
  • 2 tomatoes, diced
  • 1 tsp cumin
  • 300ml yogurt
  • Fresh mint and dill
  • 2 tbsp vegetable oil
  • 1.5L water
  • Salt and pepper

Instructions

  1. 1 Brown lamb in oil. Add onions and carrots, sauté 5 min.
  2. 2 Add tomatoes, cumin, salt, and water. Bring to a boil.
  3. 3 Add rinsed rice, reduce heat. Simmer 25 min until rice is tender.
  4. 4 Remove from heat. Stir in yogurt gently.
  5. 5 Ladle into bowls and garnish with fresh mint and dill.
