A rich, golden Tajik halva made from toasted flour cooked in butter and sugar syrup, delicately spiced with cardamom.

Ingredients

  • 250g flour
  • 150g butter
  • 200g sugar
  • 300ml water
  • 1 tsp cardamom
  • 1 tbsp vegetable oil
  • Crushed pistachios for garnish

Instructions

  1. 1 Toast flour in a dry skillet on medium heat, stirring constantly, until golden and fragrant, about 15 min.
  2. 2 In a separate pan, dissolve sugar in water, bring to a boil to make syrup.
  3. 3 Add butter to the toasted flour, stir until melted and combined.
  4. 4 Slowly pour hot syrup into the flour mixture, stirring vigorously.
  5. 5 Add cardamom, cook 5 min until thick and glossy.
  6. 6 Spread on a serving dish, garnish with crushed pistachios. Cool slightly before serving.
