A refreshing overnight mixture of rolled oats soaked in milk and lemon juice, folded with grated apple, nuts, and cream — the original Swiss health food.
Ingredients
200g rolled oats
300ml whole milk
2 tbsp lemon juice
2 large apples, grated with skin
100ml heavy cream
3 tbsp honey
50g hazelnuts, roughly chopped
Seasonal berries for topping
Instructions
1Soak oats in milk and lemon juice in a bowl. Cover and refrigerate overnight or at least 4 hours.
2Just before serving, grate the apples directly into the oat mixture and stir.
3Lightly whip the cream and fold it through the oats.
4Drizzle with honey and stir gently to combine.
5Serve in bowls topped with chopped hazelnuts and fresh berries.
