A refreshing overnight mixture of rolled oats soaked in milk and lemon juice, folded with grated apple, nuts, and cream — the original Swiss health food.

Ingredients

  • 200g rolled oats
  • 300ml whole milk
  • 2 tbsp lemon juice
  • 2 large apples, grated with skin
  • 100ml heavy cream
  • 3 tbsp honey
  • 50g hazelnuts, roughly chopped
  • Seasonal berries for topping

Instructions

  1. 1 Soak oats in milk and lemon juice in a bowl. Cover and refrigerate overnight or at least 4 hours.
  2. 2 Just before serving, grate the apples directly into the oat mixture and stir.
  3. 3 Lightly whip the cream and fold it through the oats.
  4. 4 Drizzle with honey and stir gently to combine.
  5. 5 Serve in bowls topped with chopped hazelnuts and fresh berries.
