Shrimp Toast Skagen

A luxurious open-faced toast piled high with creamy hand-peeled shrimp, crème fraîche, dill, and a crown of whitefish roe.

Ingredients

  • 4 thick slices white bread
  • 400g hand-peeled shrimp
  • 3 tbsp crème fraîche
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 50g whitefish roe (löjrom or similar)
  • Butter for toast
  • Salt and white pepper

Instructions

  1. 1 Toast bread slices until golden and butter generously while warm.
  2. 2 Gently fold shrimp with crème fraîche, mayonnaise, mustard, dill, and lemon juice. Season.
  3. 3 Pile the shrimp mixture generously on each toast.
  4. 4 Top each with a spoonful of whitefish roe and a sprig of dill.
  5. 5 Serve immediately with lemon wedges.
