Crispy, lacy potato pancakes fried in butter until golden-brown, served with lingonberry jam and a touch of sweetness.

Ingredients

  • 4 large potatoes, peeled and coarsely grated
  • 150ml milk
  • 100g all-purpose flour
  • 2 eggs
  • 1/2 tsp salt
  • Butter for frying
  • Lingonberry jam for serving

Instructions

  1. 1 Grate potatoes coarsely and squeeze out excess moisture.
  2. 2 Whisk together milk, flour, eggs, and salt into a batter. Fold in grated potatoes.
  3. 3 Heat a generous knob of butter in a skillet over medium-high heat.
  4. 4 Spoon batter into the pan, flattening each pancake to about 1cm thick.
  5. 5 Fry 3-4 min per side until deeply golden and crispy.
  6. 6 Serve immediately with lingonberry jam.
