Ginger Beer

A spicy, refreshing homemade ginger beer brewed from fresh ginger root with lime, sugar, and cloves, served ice cold.

Ingredients

  • 300g fresh ginger root, peeled and grated
  • 250g sugar
  • Juice of 4 limes
  • 4 whole cloves
  • 1 cinnamon stick
  • 1.5 liters water
  • Crushed ice

Instructions

  1. 1 Grate ginger finely and place in a large pitcher. Add cloves and cinnamon stick.
  2. 2 Boil water and pour over the ginger. Stir in sugar until dissolved. Let steep at least four hours or overnight for stronger flavor.
  3. 3 Strain through a fine sieve, pressing the ginger to extract all liquid. Add lime juice and stir well.
  4. 4 Refrigerate until very cold. Serve over crushed ice in tall glasses. Adjust sweetness to taste.
