Grate ginger finely and place in a large pitcher. Add cloves and cinnamon stick.

Boil water and pour over the ginger. Stir in sugar until dissolved. Let steep at least four hours or overnight for stronger flavor.

Strain through a fine sieve, pressing the ginger to extract all liquid. Add lime juice and stir well.
