Sudanese Fava Bean Fritters

Crispy, golden fritters made from ground fava beans seasoned with cumin, coriander, and fresh herbs. These Sudanese fritters are a breakfast staple served with fresh bread and salad.

Ingredients

  • 500g dried fava beans, soaked overnight
  • 1 large onion, quartered
  • 4 cloves garlic
  • 1 bunch fresh parsley
  • 1 bunch fresh cilantro
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp baking powder
  • 1 tsp salt
  • Vegetable oil for deep frying
  • Sesame seeds for coating

Instructions

  1. 1 Drain soaked fava beans and place in a food processor. Pulse until coarsely ground but not turned into a smooth paste.
  2. 2 Add onion, garlic, parsley, cilantro, cumin, coriander, baking powder, and salt. Pulse until combined with some texture remaining.
  3. 3 Rest the mixture in the refrigerator for thirty minutes. This helps it firm up for easier shaping into patties.
  4. 4 Shape into small round patties and press each side into sesame seeds for a crunchy coating on the exterior.
  5. 5 Deep fry in oil heated to 180C for three minutes per side until deeply golden brown and cooked through.
  6. 6 Drain on paper towels and serve hot with fresh bread, tomato slices, and tahini sauce.
