Peanut Butter Stew

A creamy, rich stew where ground peanuts form a velvety sauce around tender chunks of beef and wilted greens, offering deep nutty warmth in every spoonful.

Ingredients

  • 500g beef, cubed
  • 1 cup peanut butter or ground roasted peanuts
  • 2 onions, chopped
  • 3 tomatoes, chopped
  • 2 cups greens (spinach or amaranth)
  • 3 tbsp vegetable oil
  • 1 tsp ground coriander
  • Salt to taste
  • 3 cups water

Instructions

  1. 1 Brown beef in oil in a large pot. Remove.
  2. 2 Sauté onions until golden, add tomatoes and cook down.
  3. 3 Dissolve peanut butter in 1 cup warm water, add to pot.
  4. 4 Return beef, add remaining water, and simmer 40 minutes.
  5. 5 Add greens and coriander, cook 10 more minutes.
  6. 6 Serve over asida or with kisra.
