Crispy fried patties of ground fava beans and herbs, golden on the outside and green-flecked inside, eaten as a popular South Sudanese street breakfast.

Ingredients

  • 2 cups dried fava beans, soaked overnight
  • 1 bunch fresh cilantro
  • 1 bunch fresh parsley
  • 1 onion, quartered
  • 3 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper
  • Vegetable oil for frying

Instructions

  1. 1 Drain soaked beans and blend with herbs, onion, garlic, and spices until coarse.
  2. 2 Season with salt and pepper. Shape into small patties.
  3. 3 Heat oil to 180Β°C.
  4. 4 Fry patties until deep golden, about 4 minutes per side.
  5. 5 Drain on paper towels.
  6. 6 Serve hot with bread and salad.
