Tomato and Meat Stew

A rich tomato-based beef stew with caramelized onions and aromatic spices, simmered until the meat falls apart and the sauce is deeply concentrated.

Ingredients

  • 700g beef, cubed
  • 5 large tomatoes, chopped
  • 2 large onions, sliced
  • 3 tbsp vegetable oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 cloves garlic, minced
  • Salt to taste
  • 1 cup water

Instructions

  1. 1 Heat oil and brown beef on all sides. Remove and set aside.
  2. 2 Sauté onions until deeply caramelized, about 15 minutes.
  3. 3 Add garlic, cumin, and coriander. Cook 1 minute.
  4. 4 Add tomatoes and cook down into a thick sauce.
  5. 5 Return beef and add water. Cover and simmer 45 minutes until tender.
  6. 6 Adjust salt and serve over asida or kisra.
