A deeply flavored broth simmered from goat bones with aromatics, chili, and lime, prized as both a nourishing meal and a traditional remedy for colds and fatigue.

Ingredients

  • 1kg goat bones with some meat
  • 1 large onion, quartered
  • 3 cloves garlic, crushed
  • 1 inch ginger, sliced
  • 2 hot chili peppers
  • 2 limes, juiced
  • 1 tsp ground cumin
  • Salt to taste
  • 2L water

Instructions

  1. 1 Place goat bones in a large pot and cover with water.
  2. 2 Bring to a boil and skim foam from surface.
  3. 3 Add onion, garlic, ginger, chilies, and cumin.
  4. 4 Simmer on low heat for 1.5-2 hours until broth is rich.
  5. 5 Strain through a sieve. Season with lime juice and salt.
  6. 6 Serve hot in cups or bowls.
