Ingredients

  • 500g leafy greens (amaranth or spinach)
  • 2 tbsp shea butter or vegetable oil
  • 100g dried fish, flaked
  • 1 onion, chopped
  • 1 tomato, chopped
  • Salt to taste
  • 1/2 cup water

Instructions

  1. 1 Wash and chop greens roughly.
  2. 2 Heat shea butter in a pot and sauté onion until soft.
  3. 3 Add dried fish and tomato, cook 5 minutes.
  4. 4 Add greens and water, cover and steam 10 minutes.
  5. 5 Stir, season with salt, and cook uncovered until liquid reduces.
