Ingredients

  • 4 whole fish or fish fillets (tilapia, snapper, or kingfish)
  • 3 limes, juiced
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp chili powder
  • Salt and pepper
  • 3 tbsp vegetable oil
  • 2 cups basmati rice, cooked
  • Fresh cilantro
  • Sliced onions

Instructions

  1. 1 Clean fish thoroughly, make diagonal slashes on both sides, and place in a baking tray.
  2. 2 Mix lime juice, garlic, cumin, turmeric, chili powder, salt, and pepper, then rub all over the fish.
  3. 3 Marinate for twenty minutes, turning once to ensure both sides absorb the seasoning.
  4. 4 Heat oil in a large skillet over medium-high heat until shimmering.
  5. 5 Fry fish for five minutes per side until the coating is crispy and golden and the flesh flakes easily.
  6. 6 Serve on a bed of fragrant rice, topped with sliced onions and fresh cilantro.
