Somali One-Pot Rice and Meat

A hearty one-pot dish of rice, vegetables, and meat cooked together with xawaash spices, the everyday comfort food of Somali households.

Ingredients

  • 2 cups basmati rice, rinsed
  • 500g beef or lamb, cubed
  • 2 potatoes, cubed
  • 2 carrots, sliced
  • 1 bell pepper, diced
  • 2 tomatoes, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 1 tbsp xawaash spice
  • 1 tsp turmeric
  • 4 cups water
  • Salt to taste

Instructions

  1. 1 Heat oil in a large heavy pot, brown the meat cubes on all sides for eight minutes over high heat.
  2. 2 Add onions and garlic, cook for four minutes until softened, then add tomatoes and cook until broken down.
  3. 3 Stir in xawaash, turmeric, and salt, then add potatoes, carrots, and bell pepper, stirring to coat.
  4. 4 Pour in water, bring to a boil, and simmer covered for twenty minutes until meat is nearly tender.
  5. 5 Add rinsed rice on top without stirring, cover tightly, and cook on low heat for twenty minutes.
  6. 6 Remove from heat, let steam for ten minutes, then fluff with a fork mixing rice and meat together.
