Somali One-Pot Rice and Meat

Heat oil in a large heavy pot, brown the meat cubes on all sides for eight minutes over high heat.

Stir in xawaash, turmeric, and salt, then add potatoes, carrots, and bell pepper, stirring to coat.

Pour in water, bring to a boil, and simmer covered for twenty minutes until meat is nearly tender.

Add rinsed rice on top without stirring, cover tightly, and cook on low heat for twenty minutes.
