  • 4 whole reef fish
  • Salt for rubbing
  • 2 limes
  • Green wood
  • 1 tsp pepper
  • Banana leaves
  • 1 onion, sliced
  • Coconut cream

Instructions

  1. 1 Clean and score fish.
  2. 2 Rub with salt, lime, pepper.
  3. 3 Build smoking rack.
  4. 4 Place fish on rack over green wood.
  5. 5 Smoke 2-3 hours.
  6. 6 Serve with coconut cream.
