Roasted Sweet Potato

Sweet potatoes roasted in coals until charred and caramelized. A simple, sweet side.

Ingredients

  • 4 medium sweet potatoes
  • 1 tbsp coconut oil
  • Salt to taste
  • 1 tbsp butter
  • Lime juice
  • Coconut cream
  • 1/4 tsp cinnamon
  • Pinch of pepper

Instructions

  1. 1 Wash and poke sweet potatoes.
  2. 2 Rub with coconut oil and salt.
  3. 3 Place in hot coals or oven at 200C.
  4. 4 Roast 40 minutes until soft.
  5. 5 Split open, add butter.
  6. 6 Serve with coconut cream.
