Fish fillets simmered in mild coconut curry with onion and tomato. A popular modern dish.

Ingredients

  • 600g white fish fillets
  • 2 cups coconut milk
  • 1 onion, diced
  • 2 tomatoes, diced
  • 1 tbsp curry powder
  • 1 tbsp oil
  • Salt to taste
  • 1 lime, juiced

Instructions

  1. 1 Saute onion in oil.
  2. 2 Add curry powder, stir 30 seconds.
  3. 3 Add tomatoes, cook 2 minutes.
  4. 4 Pour in coconut milk.
  5. 5 Add fish fillets.
  6. 6 Simmer 12 minutes, season with salt and lime.
