Ingredients

2 cups grated coconut
1 cup sugar
1/4 cup water
1/4 tsp vanilla
Pinch of salt
1 tbsp butter
1/4 tsp cinnamon
Parchment paper

Instructions

1 Dissolve sugar in water.
2 Cook until golden caramel.
3 Add coconut, stir constantly.
4 Cook 10 minutes until thick.
5 Add vanilla, salt, cinnamon, butter.
6 Drop onto parchment, cool.
