Make dough with flour, egg, oil, salt, and warm water. Knead until smooth, rest 30 min.

Mix cottage cheese with eggs, sour cream, chives, and salt until smooth.

Roll dough very thin on a floured cloth. Brush with melted butter and sprinkle with breadcrumbs.

Spread cheese filling evenly across the dough.

Roll up tightly using the cloth, place seam-side down on a buttered baking sheet.

Brush top with butter and bake at 180°C (350°F) for 40-45 min until golden. Slice and serve warm.

Sirnek is a shepherd's pastry from the remote Solčava panoramic valley in northern Slovenia. Made with the freshest mountain cottage cheese, it was baked in outdoor ovens during the alpine pasturing season. It remains a centerpiece of the annual Shepherds' Ball celebration.
