Thick slices of cheese coated in breadcrumbs and fried until the exterior is shatteringly crisp and the interior is molten and stretchy.

Ingredients

  • 400g firm cheese (Emmental or Gouda), cut into 1cm slices
  • 100g all-purpose flour
  • 2 eggs, beaten
  • 150g fine breadcrumbs
  • Vegetable oil for frying
  • Lemon wedges
  • Tartar sauce for serving
  • Salt

Instructions

  1. 1 Cut cheese into rectangular slices about 1cm thick and 8cm long.
  2. 2 Set up breading station: flour in one dish, beaten eggs in another, breadcrumbs in the third.
  3. 3 Dredge each cheese slice in flour, dip in egg, then press into breadcrumbs, coating evenly.
  4. 4 Double-bread for extra crunch: dip again in egg and breadcrumbs.
  5. 5 Fry in hot oil (180°C/350°F) for 1-2 min per side until deep golden. Do not overcook or cheese will escape.
  6. 6 Drain on paper towels, sprinkle with salt, and serve immediately with lemon wedges and tartar sauce.
