A comforting Slovenian chicken stew thickened with a roux and brightened with vinegar, featuring tender chicken pieces in a velvety broth.

Ingredients

  • 1 whole chicken (about 1.5kg), cut into pieces
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 large onion, diced
  • 3 bay leaves
  • 6 whole peppercorns
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 tbsp apple cider vinegar
  • 200ml sour cream
  • Salt and pepper
  • Fresh parsley for garnish

Instructions

  1. 1 Place chicken pieces in a large pot with carrots, celery, onion, bay leaves, and peppercorns. Cover with cold water, bring to a boil.
  2. 2 Reduce heat and simmer gently for 1 hour, skimming foam as needed, until chicken is tender.
  3. 3 Remove chicken pieces and strain the broth. Keep vegetables aside.
  4. 4 Make a roux: melt butter in a clean pot, add flour, cook stirring for 2 min. Gradually whisk in 1L of strained broth.
  5. 5 Add vinegar and sour cream, whisking until smooth. Simmer 10 min until thickened.
  6. 6 Return chicken pieces and vegetables to the sauce, heat through. Season and serve garnished with parsley.
