A festive flatbread from the Bela Krajina region, enriched with eggs, cottage cheese, and seeds, baked to a golden, slightly sweet crust.

Ingredients

  • 500g all-purpose flour
  • 7g instant yeast
  • 1 tsp salt
  • 2 tbsp sugar
  • 2 eggs
  • 100ml warm milk
  • 80g butter, softened
  • 100g cottage cheese
  • 2 tbsp pumpkin seeds
  • 2 tbsp sesame seeds
  • 1 egg yolk for glaze
  • Coarse salt for topping

Instructions

  1. 1 Mix flour, yeast, salt, and sugar. Add eggs, warm milk, and softened butter. Knead into a smooth dough, about 10 min.
  2. 2 Knead in cottage cheese until evenly distributed. Cover and let rise 45 min.
  3. 3 Punch down dough, shape into a large round flatbread about 3cm thick on a lined baking sheet.
  4. 4 Score the top in a traditional diamond pattern using a sharp knife.
  5. 5 Brush with egg yolk, sprinkle with pumpkin seeds, sesame seeds, and coarse salt.
  6. 6 Bake at 190°C (375°F) for 30-35 min until deeply golden. Cool slightly before breaking into pieces.
