A creamy yet tangy potato salad with pickles, onion, hard-boiled eggs, and mustard-mayonnaise dressing. The essential accompaniment to schnitzel.

Ingredients

  • 1kg waxy potatoes
  • 4 hard-boiled eggs, diced
  • 3 pickled gherkins, diced
  • 1 small onion, finely diced
  • 150g mayonnaise
  • 2 tbsp mustard
  • 2 tbsp pickle brine
  • Salt and pepper
  • Fresh chives

Instructions

  1. 1 Boil potatoes in their skins until tender. Cool, peel, and dice.
  2. 2 Combine diced potatoes, eggs, gherkins, and onion in a large bowl.
  3. 3 Mix mayonnaise, mustard, and pickle brine. Pour over the salad.
  4. 4 Fold gently to coat without mashing the potatoes.
  5. 5 Season with salt and pepper. Refrigerate at least 1 hour.
  6. 6 Garnish with chives. Serve alongside schnitzel or cold cuts.
