Ingredients

600g potatoes, peeled and diced

2 carrots, diced

1 onion, diced

3 cloves garlic, minced

1L vegetable broth

100ml cream

2 tbsp butter

1 tsp marjoram

Salt and pepper

Fresh parsley
Instructions

Sauté onion in butter until translucent.

Add potatoes, carrots, garlic, marjoram, and broth.

Simmer 20 minutes until potatoes are very tender.

Partially mash some potatoes for thickness while leaving chunks.

Stir in cream, season with salt and pepper.
