Spiced honey cookies with intricate icing decorations, traditionally baked for Christmas. Richly flavored with cinnamon, cloves, and allspice.

Ingredients

  • 500g all-purpose flour
  • 200g honey
  • 100g butter
  • 100g powdered sugar
  • 2 eggs
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp ground cloves
  • 1/2 tsp allspice
  • 1/2 tsp ground ginger
  • Zest of 1 lemon
  • Royal icing for decoration

Instructions

  1. 1 Warm honey and butter together until butter melts. Cool slightly.
  2. 2 Mix in sugar, eggs, spices, lemon zest, baking soda, and flour into a smooth dough.
  3. 3 Wrap and refrigerate overnight for best flavor development.
  4. 4 Roll out 3-4mm thick, cut with decorative cookie cutters.
  5. 5 Bake at 180°C (356°F) for 8-10 minutes until just firm.
  6. 6 Cool completely, then decorate with white royal icing in traditional patterns. Let dry.
