Wild Mushroom Soup

A rich, earthy soup made from foraged wild mushrooms, thickened with cream and seasoned with marjoram. A taste of the Slovak forest.

Ingredients

  • 400g mixed wild mushrooms (or dried porcini reconstituted)
  • 1 onion, diced
  • 2 cloves garlic
  • 2 tbsp butter
  • 200ml cream
  • 1L vegetable broth
  • 1 tsp marjoram
  • 1 tbsp flour
  • Salt and pepper
  • Fresh parsley

Instructions

  1. 1 Clean and slice mushrooms. If using dried, soak in warm water and use the soaking liquid.
  2. 2 Sauté onion in butter, add garlic and mushrooms. Cook until golden.
  3. 3 Sprinkle with flour, stir, then add broth.
  4. 4 Simmer 20 minutes. Add marjoram.
  5. 5 Stir in cream, season with salt and pepper.
  6. 6 Serve with fresh parsley and crusty bread.
