A thick, hearty bean soup with vegetables, smoked paprika, and a tangy vinegar finish. A staple of Slovak home cooking through centuries.

Ingredients

  • 400g dried white beans, soaked overnight
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 onion, diced
  • 3 cloves garlic
  • 2 tbsp smoked paprika
  • 2 bay leaves
  • 2 tbsp apple cider vinegar
  • 2 tbsp vegetable oil
  • Salt and pepper
  • Fresh dill

Instructions

  1. 1 Drain soaked beans, cover with fresh water, bring to a boil and simmer until nearly tender, about 45 min.
  2. 2 In a separate pot, sauté onion in oil, add paprika off the heat.
  3. 3 Add carrots, potatoes, garlic, and bay leaves to beans.
  4. 4 Stir in the paprika-onion mixture. Simmer 20 more minutes.
  5. 5 Finish with vinegar and season with salt and pepper.
  6. 6 Serve topped with fresh dill.
