Instructions

Drain soaked beans, cover with fresh water, bring to a boil and simmer until nearly tender, about 45 min.

In a separate pot, sauté onion in oil, add paprika off the heat.

Add carrots, potatoes, garlic, and bay leaves to beans.

Stir in the paprika-onion mixture. Simmer 20 more minutes.

Finish with vinegar and season with salt and pepper.
