Peanuts roasted in their shells over hot sand until perfectly golden and crunchy, a ubiquitous street snack sold in small paper cones across Sierra Leone.

Ingredients

  • 500g raw groundnuts in shells
  • Fine clean sand for roasting
  • Salt to taste

Instructions

  1. 1 Heat clean sand in a large heavy pan over medium heat.
  2. 2 Add groundnuts to the hot sand, stirring continuously.
  3. 3 Roast for 15-20 minutes, turning constantly for even cooking.
  4. 4 Test by cracking one open β€” the nut should be golden and crunchy.
  5. 5 Remove from sand, shake off excess, and let cool slightly.
  6. 6 Serve in paper cones with a sprinkle of salt.

Did You Know?

Sierra Leonean groundnut vendors have a signature whistle or call β€” regular customers can identify their favorite vendor by sound alone before they even see them.
