A fiery, refreshing homemade ginger drink brewed with fresh ginger root, lime, sugar, and cloves, served ice-cold as Sierra Leone's favorite non-alcoholic beverage.

Ingredients

  • 500g fresh ginger root, peeled
  • 2 cups sugar
  • Juice of 6 limes
  • 6 whole cloves
  • 1 tsp cream of tartar
  • 8 cups water
  • Ice for serving

Instructions

  1. 1 Blend ginger with 2 cups of water until very smooth.
  2. 2 Strain through fine cloth, squeezing out all juice.
  3. 3 Boil remaining water with cloves for 5 minutes. Cool completely.
  4. 4 Combine ginger juice, cooled clove water, sugar, lime juice, and cream of tartar.
  5. 5 Stir until sugar dissolves completely.
  6. 6 Refrigerate overnight for best flavor. Serve over ice.
