A fiery, refreshing homemade ginger drink brewed with fresh ginger root, lime, sugar, and cloves, served ice-cold as Sierra Leone's favorite non-alcoholic beverage.
Ingredients
500g fresh ginger root, peeled
2 cups sugar
Juice of 6 limes
6 whole cloves
1 tsp cream of tartar
8 cups water
Ice for serving
Instructions
1Blend ginger with 2 cups of water until very smooth.
2Strain through fine cloth, squeezing out all juice.
3Boil remaining water with cloves for 5 minutes. Cool completely.
4Combine ginger juice, cooled clove water, sugar, lime juice, and cream of tartar.
5Stir until sugar dissolves completely.
6Refrigerate overnight for best flavor. Serve over ice.
