Stir-fried rice loaded with diced vegetables, scrambled eggs, and shrimp, seasoned with soy sauce and curry powder — a beloved party and celebration dish.

Ingredients

  • 4 cups cooked rice, cooled
  • 200g shrimp, peeled
  • 3 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, green beans), diced
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tsp curry powder
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. 1 Heat oil in a large wok over high heat.
  2. 2 Scramble eggs, break into small pieces, set aside.
  3. 3 Stir-fry shrimp until pink, remove and set aside.
  4. 4 Sauté onion and garlic 2 minutes, add diced vegetables.
  5. 5 Cook vegetables 3-4 minutes until tender-crisp.
  6. 6 Add cold rice, stir-fry vigorously breaking up clumps.
  7. 7 Add soy sauce, curry powder, return eggs and shrimp.
  8. 8 Toss everything together 2-3 minutes. Serve hot.
