Thick slices of ripe plantain deep-fried until caramelized and golden, offering a sweet and slightly crispy side that pairs with everything.

Ingredients

  • 4 ripe plantains
  • Vegetable oil for frying
  • Pinch of salt

Instructions

  1. 1 Peel plantains and cut diagonally into 1cm thick slices.
  2. 2 Heat oil to 170°C (340°F) in a deep pan.
  3. 3 Fry plantain slices in batches for 3-4 minutes per side until golden brown.
  4. 4 Remove with slotted spoon and drain on paper towels.
  5. 5 Sprinkle with salt and serve immediately.
